How is acid anhydride obtained from carboxylic acid?

When carboxylic acid is heated with strong dehydrating agent like phosphorus pentoxide or concentrated sulphuric acid, an acid anhydride is obtained, The reaction is reversible and anhydride is hydrolysed back to acid.
Alternatively, when sodium acetate is heated with acetyl chloride, acetic anhydride is obtained. This reaction is irreversible.
