  1. Globular Proteins: These proteins have a spherical shape, which results from the coiling around of the polypeptide chain of the protein. They are usually soluble in water. Examples include insulin, egg albumin, serum albumin, and legumelin (a protein found in pulses).
  2. Fibrous Proteins: These proteins have an elongated, rod-like shape, resulting from the polypeptide chains being held parallel to each other. Their shape is maintained through hydrogen bonds and disulfide bonds, making fibrous proteins insoluble in water. Examples of fibrous proteins are keratin (present in hair, nails, and wool) and myosin (a muscle protein).
