Aldehydes having a methyl or methylene group in the et-position or more correctly having atleast one hydrogen atom in the et-position undergo dimerisation in presence of a base at low temperature to form $\alpha$-hydroxy aldehydes called aldols. As benzaldehyde does not have any $\alpha$-hydrogen hence it does not undergoes aldol condensation.
