Question
State the preparation, properties and uses of ethanol.

Answer

$\rightarrow$ Ethanol, $C_2H_5OH,$ is obtained commercially by fermentation, the oldest method is from sugars. The sugar in molasses, sugarcane or fruits such as grapes is converted to glucose and fructose, $($both of which have the formula $C_6H_{12}O_6),$ in the $612$ presence of an enzyme, invertase. Glucose and fructose undergo fermentation in the presence of another enzyme, zymase, which is found in yeast.
$C _{12} H _{22} O _{11}+ H _2 O \xrightarrow{\text { Invertase }} \underset{\text { Glucose }}{ C _6 H _{12} O _6}+\underset{\substack{$
$F{\text {ructose }}}}{ C _6 H _{12}O_6}$
$C _6 H _{12} O _6 \xrightarrow{\text { Zymase }} 2 C _2 H _5 OH +2 CO _2$
$\rightarrow$ In wine making, grapes are the source of sugars and yeast. As grapes ripen, the quantity of sugar increases and yeast grows on the outer skin. When grapes are crushed, sugar and the enzyme come in contact and fermentation starts. Fermentation takes place in anaerobic conditions i.e. in absence of air. Carbon dioxide is released during fermentation.
$\rightarrow$ The action of zymase is inhibited once the percentage of alcohol formed exceeds $14$ percent. If air gets into fermentation mixture, the oxygen of air oxidises ethanol to ethanoic acid which in turn destroys the taste of alcoholic drinks.
$\rightarrow$ Ethanol is a colourless liquid with boiling point $351 K.$ It is used as a solvent in paint industry and in the preparation of a number of carbon compounds. The commercial alcohol is made unfit for drinking by mixing in it some copper sulphate $($to give it a colour$)$ and pyridine $($a foul smelling liquid$).$ It is known as denaturation of alcohol.

The boiling point elevation and the freezing point depression of solutions have a number of practical applications. Ethylene glycol $(CH_2OH$-$CH_2OH)$ is used in automobile radiators as an antifreeze because it lowers the freezing point of the coolant. The same substance also helps to prevent the radiator coolant from boiling away by elevating the boiling point. Ethylene glycol has a low vapour pressure. We can also use glycerol as an antifreeze. In order for boiling point elevation to occur, the solute must be non$-$volatile, but no such restriction applies to freezing point depression. For example, methanol $(CH_3OH),$ a fairly volatile liquid that boils only at $65^\circ C$ is sometimes used as antifreeze in automobile radiators.

Raoult's law for volatile liquids states that the partial vapour pressure of each component in the solution is directly proportional to its mole fraction, whereas for a non $-$ volatile solute, it states that the vapour pressure of a solution of a non $-$ volatile solute is equal to the vapour pressure of the pure solvent at that temperature multiplied by its mole fraction. Two liquids $A$ and $B$ are mixed with each other to form a solution, the vapour phase consists of both components of the solution. Once the components in the solution have reached equilibrium, the total vapour pressure of the solution can be determined by combining Raoult's law with Dalton's law of partial pressures. If a non $-$ volatile solute $B$ is dissolved into a solvent $A$ to form a solution, the vapour pressure of the solution will be lower than that of the pure solvent. The solutions which obey Raoult's law over the entire range of concentration are ideal solutions, whereas the solutions for which vapour pressure is either higher or lowerthan that predicted by Raoult's law are called non $-$ ideal solutions. Non $-$ ideal solutions are identified by determining the strength of the intermolecular forces between the different molecules in that particular solution. They can either show positive or negative deviation from Raoult's law depending on whether the $A - B$ interactions in solution are stronger or weaker than $A - A$ and $B - B$ interactions.
